This simple crockpot recipe boasts a rich maple dijon sauce.
Place the pork tenderloin in the bottom of the crockpot and sprinkle with salt and pepper.
Add all ingredients for the sauce to a small bowl and whisk together until well combined. Pour over pork in the crockpot and turn to coat evenly.
Cook on low for 6-8 hours.
Just before service, carefully remove the pork to a plate and cover with foil. Pour all liquid out of the crockpot into a small sauce pan. Remove any large chunks or meat or fat. Bring liquid to a boil then lower heat to low and simmer for 10 mins.
Combine the water and starch in a small bowl and whisk together. Add to the sauce and stir to combine. Cook another few mins while sauce thickens then remove from heat.
Slice the Pork Tenderloin and place on plates to serve. Spoon sauce over the slices generously.
