This Simple Vegetarian Curry goes well with Cauliflower Rice or other grain base such as basmati rice or quinoa.
In Chef’s Pan or Large Skillet with a lid, add the coconut oil and diced onion. Cook until Translucent. About 7-8 minutes.
Add the curry paste and stir to combine. Cook for another 1-2 minutes until combined.
Add the coconut milk, lentils, peas, broth and chickpeas. Reduce heat, cover and simmer for 15 minutes or until lentils are tender.
Uncover and cook to reduce to desired consistency - about 15 minutes.
Serve over prepared base with Indian Spiced Yogurt.
