This basic recipe is easy to modify to suit your tastes.
Add oil to a large skillet with a lid. Heat over medium heat. Add potatoes, onions and peppers, salt and pepper. Stir to coat veggies in oil and seasoning.
Reduce heat to low and cover. Cook until potatoes are fork tender, stirring several times to be sure onions and peppers do not burn. Reduce heat as necessary.
