Basic Breakfast Skillet Potatoes

Basic Recipes are just that. Basics. Recipes that can be easily modified for different versions. Recipes that can be thrown together in a hurry. These are some of the best recipes I have. Takes these basic recipes and make them your own.

Breakfast Skillet Potatoes are a staple in my house. I make them most of the time using little red potatoes that I grow in our garden. But you can make these with any type of potato – Russet, Sweet, White Sweet, or a mix of all of the above.

I almost always add diced onions and peppers – sometimes bell, sometimes jalapeno – for some depth of flavor. The best seasoning is salt and pepper, but I also love Primal Palette Meat and Potato seasoning or adding a dash of chili pepper or even garlic. I have also been know to through in some cumin or curry! Crazy, I know.

Basic Skillet Breakfast Potatoes

This basic recipe is easy to modify to suit your tastes.

Ingredients

  • 2 cups little red potatoes cubed
  • 1/4 cup onion diced
  • 2 tbsp bell pepper diced
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Add oil to a large skillet with a lid. Heat over medium heat. Add potatoes, onions and peppers, salt and pepper. Stir to coat veggies in oil and seasoning.

  2. Reduce heat to low and cover. Cook until potatoes are fork tender, stirring several times to be sure onions and peppers do not burn. Reduce heat as necessary.
