Adjust racks to upper-middle and lower middle positions and preheat the oven to 250 degrees.
Line a cookie sheet with aluminum foil. Place a wire rack on the tray. Spray with non-stick spray.
Pat dry your prepared wings with paper towels and place in a large bowl. Combine baking powder and salt and add to wings and toss to coat. Arrange the wings, skin side up, in a single layer on the wire rack.
Bake on the lower-middle rack for 30 mins then move the wings up to the upper-middle rack and increase the temperature to 425 degrees.
Cook for another 40-50 mins, until golden and crispy, rotating half way through. Remove from the oven and let stand for about 5 mins.
