Oven Baked Crispy Chicken Wings

So maybe this recipe should be called Oven Baked Crispy Chicken Dummettes because after breaking a second pair of kitchen scissors I swore off the whole wing-thing. But if you are set on the full-out wing experience just follow the directions below. But most importantly this recipe will become a favorite if you love wings. It is super easy they really are super crispy!

If you bought full wings, take each wing and carefully cut off the tips at the first joint and discard. Next cut at the joint between the wing and drumstick to separate. There. All done. If you went the easy route and bought drummettes, you’re ready too!

I use my full size oven for this recipe so I can adjust the racks before starting to cook instead of needing to adjust half way through. Adjust racks to upper-middle and lower middle positions and preheat the oven to 250 degrees. Line a cookie sheet (or jelly roll pan) with aluminum foil. You don’t have to do this, but trust me, you will thank me later when everyone disappears when it is time to do dishes. Place a wire rack on the tray. I use the rack that came with my roaster. Spray with non-stick spray.

Pat dry your prepared wings or drummettes with paper towels and place in a large bowl. Combine baking powder and salt and add to wings and toss to coat. Arrange the wings, skin side up, in a single layer on the wire rack. Start them baking on the lower-middle rack for 30 mins. At the end of 30 mins, move the wings up to the upper-middle rack and bump up the oven temperature to 425 degrees and cook for another 40-50 mins, until golden and crispy. If your even doesn’t cook evenly, rotate about half way through to make sure the wings cook evenly. Remove from the oven and let stand for about 5 mins.

Now is the fun part. Transfer the wings to a large bowl and add your favorite sauce and toss to coat. Serve hot. Enjoy!

  • 1/4 salt
  • Sauce see recipes above or your favorite store bought variety

  4. Bake on the lower-middle rack for 30 mins then move the wings up to the upper-middle rack and increase the temperature to 425 degrees.

  5. Cook for another 40-50 mins, until golden and crispy, rotating half way through. Remove from the oven and let stand for about 5 mins.
