Mint Chocolate Truffle Fat Bombs 3 Ways
Guys, small batch, single bite desserts are so important to me. I would like to say that I have the will power of a god, but the truth is, I ate that batch of Almond Butter No Bakes, by myself, in like 5 days. I’m not going to beat myself up for it, because I don’t do it all the time, but I know my limits. Small batch, single bite options are better for me. That way I get to feel like I had dessert without feeling like I have dessert!
These little truffles are basically little fat bombs, so they are perfect for your Keto, Paleo or 131 Method diet plan. I couldn’t decide which way I wanted to top these off, so I went with a few of each. The hard part was not sampling one of each all at once! See? Questionable will power. It was hard enough not to eat one before I could get the photos taken.
I know it wouldn’t be “healthy” but how fun would these be rolled in crushed candy canes at Christmas? Or sprinkles for a party? Just sayin. Let me know what topping you picked or if you tried one of your own!
Mint Chocolate Truffles 3 Ways
These truffles are healthy and amazing with or without the topping of your choice.
Ingredients
- 3/4 cup flax seed
- 1/2 cup cacao powder
- 1/4 cup Swerve powdered sugar
- 2 tbsp coconut flour
- 3 tbsp unsweetened almond milk
- 2 tbsp coconut oil softened
- 1 tsp vanilla extract
- 1 tsp peppermint extract
Instructions

Combine all ingredients in a food process. Process until dough starts to form. Roll 1 tbsp of dough into a ball and place on wax paper.

Roll in optional toppings such as cacao powder, Swerve powdered sugar or melted dairy free / sugar free chocolate chips.
