Chocolate Covered Strawberries

If you are looking for a fast and fun dessert, Chocolate Covered Strawberries are the way to go. The key is to start with the freshest Organic Strawberries you can find. I prefer to use the largest as well.

Start by rinsing your berries and allow them to dry completely. Next melt half a bag of chocolate chips with 1 tablespoon of coconut oil. I like to use Enjoy Life Dairy Free Chocolate chips for a dark chocolate flavor and Ghirardelli White Chocolate Chips. The coconut oils isn’t completely necessary, but does help to keep the chocolate smooth once melted.

Line a baking sheet with waxed paper. Dip a strawberry in the chocolate and roll to coat. Be careful not to get chocolate on the green top. Place the coated strawberry on the lined baking sheet. Once all of the strawberries are coated, place in the refrigerator about 10 mins to set the chocolate. Remove the strawberries and use the left over chocolate of the opposite color and drizzle over the berries. You can also use sprinkles or mini chocolate chips. Place the berries back into the refrigerator for several hours or over night to let the chocolate finish hardening.

Ingredients

  • 6 oz Dark Chocolate Chips
  • 6 oz White Chocolate Chips
  • 2 tbsp coconut oil divided
  • 24 large organic strawberries

Instructions

  1. Melt each type of chocolate chips in a bowl with 1 tbsp coconut oil. Should be smooth.

  2. Dip half of the strawberries in each type of chocolate and place on a wax paper lined baking sheet. Place in Refrigerator for 10 mins.

  3. Remove strawberries from refrigerator and drizzle with opposite color chocolate. Place back in to the refrigerator for several hours to overnight to finish letting the chocolate harden. Strawberries will last a couple of days in an air tight container in the refrigerator.
