Gluten Free Paleo Blackberry Cobbler

It’s blackberry season in Kentucky and our entire property is lined with wild blackberry bushes. They may be small but they are sweet and delicious and taste like summer.

I prefer to make deserts in single serving containers versus a single pan. It makes it easy to grab one to heat up and eat a single serving and not be temped to eat more than you should!

I store them in the refrigerator for up to a week and heat up in the microwave for 15 – 20 secs before eating.

This recipe works well with any berry of your choice – strawberry, raspberry, blueberry or mix them all!

Gluten Free Paleo Blackberry Cobbler

You can use any berry in this gluten-free paleo cobbler recipe!

Ingredients

Filling

  • 4 cups fresh blackberries
  • 1/4 cup palm sugar
  • 1 T lemon juice
  • 2 T corn starch or arrowroot

Topping

  • 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 3 T coconut oil melted
  • 1 t vanilla
  • 4 T palm sugar
  • Pinch of salt

Instructions

  1. Preheat oven to 350.
  2.  Mix topping ingredients and spoon evenly over ramekins.

  3. Mix together filling ingredients and divide evenly between ramekins.

  4. Grease 4 ramekins.

  5. Place on a baking sheet and bake for 30 mins.

Recipe Notes

Store once cooled in the refrigerator and reheat in microwave 15-20 secs before serving. Adding Ice Cream is always nice!
