Crockpot Pulled Pork BBQ Sliders

Pulled Pork is a great basic. Typically I make a big batch and divide and store in the freezer for those hectic week nights or lunch for the hubby. If I am planning to freezer some, I will pull it out before mixing in the BBQ Sauce.

The best part about this Pulled Pork is I make it in the crock pot. Super easy.  Place everything in the crockpot in the morning, leave for work and come home to dinner ready to go!

The Hawaiian Rolls Recipe can be found at Gluten Free on a Shoe String. It does take some time and practice but the results are worth it. It is worth noting I used Cup4Cup for the flour and did not make my own flour mixture. My rolls were slightly more dense than the store bought ones but still had great flavor and texture.

Ingredients

For the Pulled Pork

  • 1/2 Cup Veggie or Chicken broth
  • 1 medium onion cut into 8 big chunks
  • 2 lb Pork Tenderloin
  • salt and pepper
  • 8 pineapple rings optional
  • 2 cups BBQ sauce

Hawaiian Sweet Slaw

  • 1-1/2 cup Broccoli slaw mix or other slaw mix of choice
  • 1/4 cup Primal Kitchen Avocado Mayo
  • 1/2 cup crushed pineapple
  • 1 TBSP Swerve Sweetener

Hawaiian Rolls

  • 1 batch of Hawaiian Rolls

Instructions

Pulled Pork

  1. Place 1/2 Cup Veggie or Chicken broth in the Crock pot with 1 medium onion cut into 8 big chunks. Place a 2 lb Pork Tenderloin on top of the onions. Sprinkle with salt and pepper. (For a sweeter taste, add some pineapple rings to the top.) Cover and cook on Low for 8 hours.
  2. When timer runs out, remove the tenderloin and discard onions and all but 1/4 cup of liquid. replace the tenderloin and liquid into the crock. Shred with a fork. (Remove any pulled pork you want to freeze at this time.) Add 2 cups of BBQ sauce, stir in and recover. Turn the crock onto warm for 30 mins to heat through.

Hawaiian Sweet Slaw

  1. Mix together and place in the fridge for 1 hour
  2. Assemble the sliders and enjoy!
