Crock Pot Brown Bean and Ham Soup
This was a busy and stressful week for me. I needed some easy, low stress dinner options so Monday I ran into The Honey Baked Ham Store for a bone in ham. That night we had ham for dinner with some quick sides and I took all of the slices off of the bone and packaged them into small packs. Some stayed in the refrigerator for a quick lunch protein and the rest went straight into the freezer.
The bone I wrapped back up and stuck in the fridge for the next day. I dug out a half a bag of dried pinto beans from the pantry and left them soaking on the counter overnight. Tuesday morning I stuck the soaked beans, the ham bone, some onion and seasonings in the crock pot and raced out the door.
We enjoyed the soup that night with some Glutino Corn Bread that mixes up quick and easy. Again, I divided up the left overs into packets for the freezer and lunch for a day or two. The remainder of the beans I drained, added some additional spices to and threw it all into the food processor to make some re-fried beans for use later in the week with Fajitas and Chicken Tortilla Soup.
Meal planning and prep doesn’t have to be hard or time consuming. I know buying a pre-made Ham or corn bread mix might not qualify for squeaking clean, but sometimes we all need some short cuts. My eating plan does not fit neatly into a box of any one mainstream diet. I have spent over a year testing out all types of foods to see what works for me. Crock Pot Brown Beans and Ham
This heart classic southern soup is a quick meal with few ingredients.
Ingredients
- 1 lb dried pinto beans
- 6-8 cups water
- 1 ham bone or cottage butt
- 1 large onion chopped
- 1 tsp minced garlic
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Soak the dried pinto beans 8 hours or overnight. Drain and rinse.

Add beans, ham bone, onion, garlic and seasonings to the crock pot. Add 6-8 cups of water. Mine takes about 7 cups depending on the size of the ham bone. Cover and cook on low for 8 hours.

Serve with Gluten Free Corn Bread and optional toppings such as hot sauce, shredded cheese, sour cream, sliced avocado.
