Cajun Corn Maque Choux

My husband loves corn. In fact it is his favorite “vegetable”. I know, corn is a grain, not a vegetable. But don’t tell him that. lol. I try to find new fun ways to eat corn and this cajun version is quick and easy to throw together. Leftovers make a great lunch too!

The recipe calls for Andouille sausage since it is obviously cajun, but in a pinch you can use kielbasa or other type of sausage. Again, make it yours!

I serve this as a side with Cajun Baked Shrimp but tend to eat the leftovers as a complete meal.

Cajun Corn Maque Choux

Ingredients

  • 12 oz andouille sausage sliced
  • 1 small red onion diced
  • 2 cups frozen sweet corn
  • 1 can tomatoes and chilis
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp cajun seasoning

Instructions

  1. Cooked sliced sausage 3-4 minutes each side. Add diced onion and saute until softened. Add corn, tomatoes and chilis, salt, pepper and cajun seasoning. Mix well and cook until corn is heated through and seasoning is fragrant. about 15 minutes.
