No Churn Blackberry Vanilla Swirl Frozen Yogurt

Nothing says summer more than Blackberry Ice Cream. This version does not require an ice cream maker & is made with Yogurt instead of Cream. I chose Redwood Hill Farm Goats Milk Plain Yogurt but you could use any Yogurt in its place.

We have an abundance of wild blackberries on our property in Kentucky. In previous years I have made a hundred or so jars of Blackberry Jam to use for Christmas gifts. This year I decided to use the berries in a variety of recipes. One of the only kitchen gadgets I do not own is an ice cream maker so I was on a mission to make a non-dairy, no ice cream maker “ice cream”.

This turned out to be a hit – even with my super picky eater hubby who was skeptical at first, but asked for seconds as soon as he finished his first tester bowl! Feel free to try this recipe with other fresh summer berries like strawberry, raspberry or blueberry!

No Churn Blackberry Vanilla Swirl Frozen Yogurt

This is a light, refreshing Frozen Yogurt that does not require an ice cream maker!

Ingredients

Yogurt base

  • 32 oz plain Yogurt Goats Milk or other Plain
  • 1-1/4 cup honey
  • 1-1/2 T vanilla
  • 2 t lemon juice

Blackberry Swirl

  • 2 cups blackberries fresh
  • 1 cups sugar
  • 1/2 T lemon juice

Instructions

  1. To make the Base

  2. Combine all Base ingredients in a blender. Pour half of the mixture in a parchment lined loaf pan & the other in a freezer safe container. Freeze for 2 hours until firm but not frozen.

To make the Blakcberry Swirl

  1. Combine all Blackberry Swirl ingredients in a sauce pan. Cook until boiling over medium heat, stirring continuously. Cool then place in refrigerator while yogurt freezes.

To combine the Base and Blackberry Swirl

  1. At the end of 2 hours remove yogurt from the freezer. Spread a layer of the Blackberry mixture over the vanilla, then top with the remaining half of vanilla. Finally top with a layer of blackberry sauce & swirl with a knife. Place back into the refrigerator for 6-8 hours or overnight. Take out 10-15 mins before serving to allow to soften slightly.

Recipe Notes

You can use any type of Yogurt in place of the Redwood Hill Farms Goat Milk Yogurt that I used.
