Crockpot Paleo Maple Dijon Pork Tenderloin
January holds big expectations. Everyone is on a diet and setting resolutions. For me January means getting back to a routine and much more simple an healthy meals. This typically means meals consisting of simple protein and veggies. No complicated recipes or fancy dishes.
January also means getting back to a normal work schedule which means I am back to working longer hours and being on the road 4 days a week. That means I have my crockpot working over time. It makes getting dinner on the table so much easier.
This is a spin on my Maple Dijon Baked Chicken. You probably have all of the ingredients in your refrigerator or pantry already. All of the ingredients go straight into the crockpot and cook all day while you are busy doing other things. Then you finish up the sauce just before serving in about 10-15 minutes. Add some roasted veggies, a salad or some sauteed kale and you have a healthy meal right on the table.
Crockpot Paleo Maple Dijon Pork Tenderloin
This simple crockpot recipe boasts a rich maple dijon sauce.
Ingredients
- 2 lb pork tendloin
- salt and pepper to taste
For the Sauce
- 2 tsp minced garlic
- 3 tbsp maple syrup
- 3 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme
To finish the sauce
- 1 tbsp tapioca starch
- 1-1/2 tbsp water
Instructions

Place the pork tenderloin in the bottom of the crockpot and sprinkle with salt and pepper.

Add all ingredients for the sauce to a small bowl and whisk together until well combined. Pour over pork in the crockpot and turn to coat evenly.

Cook on low for 6-8 hours.

Just before service, carefully remove the pork to a plate and cover with foil. Pour all liquid out of the crockpot into a small sauce pan. Remove any large chunks or meat or fat. Bring liquid to a boil then lower heat to low and simmer for 10 mins.

Combine the water and starch in a small bowl and whisk together. Add to the sauce and stir to combine. Cook another few mins while sauce thickens then remove from heat.

Slice the Pork Tenderloin and place on plates to serve. Spoon sauce over the slices generously.
