Paleo Mongolian Beef and Broccoli with Cauliflower Rice

I love Flank Steak. I literally buy it anytime I walk into the butcher and see it in the case. It is such a versatile cut of meat, especially for stir fry recipes or fajitas.

Mongolian Beef is one of my favorite Asian recipes to order out. I do like to sneak in extra veggies whenever possible so I like to make mine with steamed Broccoli and serve over Cauliflower Rice. Sometimes I will also add some water chestnuts for crunch and texture.

As I have issues with soy, I use Coconut Aminos in its place. Seriously, you would never know the difference from a taste perspective. If you have trouble finding it in your local grocery, I order mine from Amazon.

Paleo Mongolian Beef and Broccoli with Cauliflower Rice

Flank Steak is my favorite cut of meat. It is perfect for stir fry recipes. If you have trouble finding it, you can substitute sirloin steak or flat iron steak.

Ingredients

For the Beef

  • 1 lb Flank Steak thinly sliced
  • 1 tsp sesame oil
  • 1 tsp arrowroot starch
  • 1/4 cup arrowroot starch for frying
  • 2 tbsp coconut oil for frying

For the Sauce

  • 1 tsp sesame oil
  • 1 tsp garlic minced
  • 1/2 tsp dried ginger
  • 1/4 cup palm sugar
  • 1/3 cup coconut aminos
  • 1/3 cup beef broth
  • 1 tsp red pepper flakes

Other Ingredients

  • 2 cups broccoli florets fresh or frozen
  • 2 cups riced cauliflower fresh or frozen
  • 1 tsp red pepper flakes
  • 2 green onions
  • sesame seeds

Instructions

  1. Toss thinly slice flank steak in sesame oil and arrowroot starch. Place in a ziplock bag and place in the refrigerator for at least 10 minutes, but up to an hour.

To Make the Sauce

  1. add oil, garlic and ginger to a small sauce pan over medium heat. Cook until fragrant. Add red pepper flakes. Add coconut aminos, broth and sugar and whisk to combine. Bring to a boil the reduce heat and simmer on low until sauce thickens, about 10 minutes.

To Make the Beef

  1. In a large skillet, heat oil. Add 1/4 cup starch to the beef in the bag and toss to combine. Place strips in the pan and fry on both sides until browned and cooked through. Reduce heat and drain any excess liquid.

  2. Add Sauce to the beef and combine well. Reduce heat to low and allow to cook while making the broccoli and Cauliflower rice.

For the Veggies

  1. Steam the broccoli per instructions and heat the Cauliflower rice.

Assemble the Bowl

  1. Add cauliflower rice, broccoli and beef to bowls. Top with Sliced green onions, red pepper flakes and sesame seeds.
