Best Egg Salad

Let’s just get it out there. I LOVE EGGS. Like, I eat them almost every day in some form or fashion. Hard Boiled Eggs are a staple for me for a quick meal to grab and go. So while in the grocery store this week picking up eggs (Vital Farms are my favorite brand, but also will grab Blue Sky as well) I saw this package of 6 peeled Organic Free-Range Hard Boiled Eggs. Now, they are not Certified Humane, but come on, in a pinch this is brilliant. So I picked up a pack to try them out in a batch of my Best Egg Salad. The yolks were not quite as orange in color as Vital Farms or Blue Sky but no ugly green rings and the flavor was nice. Egg Salad is a simple meal loaded with protein and healthy fats. I eat mine either straight from the bowl or on a grain free tortilla.

Best Egg Salad

I prefer to boil my own eggs but stock bought organic hard boiled eggs can work in a pinch.

Ingredients

  • 6 Hard Boiled Eggs peeled and rough chopped
  • 2 strips of Nitrate free bacon fully cooked and crumbled
  • 1/4 cup Paleo Mayo
  • 3-4 Jalapeño Slices diced or more to taste
  • 1/8 tsp garlic
  • 1/4 tsp salt
  • fresh ground pepper to taste

Instructions

  1. Combine all ingredients in a bowl and stir to combine.
